By far, my favorite side dish is sweet potato fries. I’m always disappointed when restaurants don’t offer them!
They’re absolutely D.E.L.I.C.I.O.U.S.
You would think because I love them so much that I’d make them all the time… Surprisingly, this past weekend was my first attempt to bake a batch.
My cleanse eliminates regular potatoes, so you can imagine my amazement to find that they actually had recipes for my favorite fries!
Also, I feel like I never made them before because I didn’t want to mess them up! I mean, who wants to ruin something they love?
I hate peeling potatoes.. just ask my husband. I deeply fathom it. Much to my surprise, though, sweet potatoes are a bit different in texture and density to normal potatoes and peel really smoothly.
Anyway, this is by far the easiest recipe ever, and turns out great!
The only ingredients are sweet potatoes, extra virgin olive oil, and sea salt.
Another thing I should mention is that this was the type of sweet potato my local grocer had in stock when I was shopping! I know the typical image of a sweet potato is thought to resemble more of a yam, but these have a light skin and white/cream colored flesh. They literally taste the same to me.
Justin and I shared the plate as we also had salads of our own to munch. The fries acted almost as a dessert because their sweet nature just leaves you feeling satisfied.. yuuuum.
Recipe:
2 Sweet Potatoes, peeled and cut into 2″ strips
(I like mine long and thin, this will have an effect on the cook time)
2 Tablespoons of Extra Virgin Olive Oil
1/2 teaspoon of Sea Salt
Directions: Preheat oven to 425 degrees Fahrenheit
- peel and cut sweet potatoes 2. place in medium sized bowl 3. coat in EVOO and Sea Salt 4. place on cookie sheet 5. bake until golden brown or desired
Cook Time: 25 min (I set my timer to 20 and checked them every 5 minutes; personally I like them a bit crispy and ended up leaving them in for about 35 minutes)
